Pehalwaan Chutney

The funny name not withstanding, this recipe of green onions is unique and rare. The name literally means Wrestler’s chutney coz its so healthy to eat.

Ingredients

Green Onions                         1/2 kg

Tomatoes                                2 large-sized

Carom Seeds                          1 tsp

Ginger paste                          1 tsp

Garlic paste                           1 tsp

Green chillies                        6

Red Chillies                            6

Dry mango powder            1 tsp

Vegetable oil                        1 tbsp

Salt to taste

Preparation:

  1. Finely chop red chillies, green chillies, green onions and tomatoes.
  2. Pour oil in the pan and heat it well. Pour the ajwain seeds so that they sputter and crackle.
  3. Add ginger paste and garlic paste and the chopped red chillies. Fry them till the red chillies are almost black.
  4. Add green onions and fry at medium-high heat till it reduces in volume. Keep frying  for 10 mins till it starts sticking the pan.
  5. Add chopped tomatoes and salt and keep frying at medium heat for 15 minutes.
  6. Switch off the flame and mix dry mango powder.
  7. Serve hot with chapathis/ parathas.

Stuffed Okra

I absoultely love cooking and am always trying on new stuff by myself. Sometimes I pick up new recipes from others or from web and tweak them to my taste. This particular recipe I learnt from my freind’s mom. She is a divine cook and I have learnt a lot from her. Do try this simple mouth-watering recipe.

Ingredients

  • Okra                                            1/2  kg
  • Vegetable oil                           2 tbsp     

For Masala:

  • Onion (medium-sized)           2 no.s
  • Green chillies                             5 no.s
  • Red chillies                                 5 no.s
  • Ginger paste                               1 tsp         
  • Garlic paste                                1 tsp
  • Dry mango powder                 1 tsp
  • Ajwain                                          1 tsp
  • Salt to taste

Method:

 Masala Preparartion:

  • Grind the onion, green chillies and red chillies to a fine paste.
  • Heat the pan. Pour 1 tbsp vegetable oil and then ajwain seeds. Once the ajwain seeds start crackling, pour all the contents listed under masala except dry mango powder. Keep frying the masala on medium flame till its very dark reddish brown.
  • Take the fried masala off the flame and cool it well. Mix dry mango powder to the masala.

Final Preparation:

  1. Wash the okras and dry them thoroughly. Slit them lengthwise, leaving the ends joined.
  2. Now take each okra and stuff it with the prepared masala.
  3. Shallow fry the stuffed okras on medium flame and serve hot with rice/ rotis.
