I absoultely love cooking and am always trying on new stuff by myself. Sometimes I pick up new recipes from others or from web and tweak them to my taste. This particular recipe I learnt from my freind’s mom. She is a divine cook and I have learnt a lot from her. Do try this simple mouth-watering recipe.
Ingredients
- Okra 1/2 kg
- Vegetable oil 2 tbsp
For Masala:
- Onion (medium-sized) 2 no.s
- Green chillies 5 no.s
- Red chillies 5 no.s
- Ginger paste 1 tsp
- Garlic paste 1 tsp
- Dry mango powder 1 tsp
- Ajwain 1 tsp
- Salt to taste
Method:
Masala Preparartion:
- Grind the onion, green chillies and red chillies to a fine paste.
- Heat the pan. Pour 1 tbsp vegetable oil and then ajwain seeds. Once the ajwain seeds start crackling, pour all the contents listed under masala except dry mango powder. Keep frying the masala on medium flame till its very dark reddish brown.
- Take the fried masala off the flame and cool it well. Mix dry mango powder to the masala.
Final Preparation:
- Wash the okras and dry them thoroughly. Slit them lengthwise, leaving the ends joined.
- Now take each okra and stuff it with the prepared masala.
- Shallow fry the stuffed okras on medium flame and serve hot with rice/ rotis.
